PASTA WITH TOMATOES
Ingredients
750ml canned large tomatoes with herbs
1 finely chopped shallot
1/2 diced green pepper
1/2 diced red pepper
125ml cooked mushrooms
1 tbsp (15ml) olive oil
Preparation
Lightly sauté the peppers in a non-stick frying pan, then add all the other ingredients and simmer for 10 to 15 minutes.
Serve over 1 cup (250ml) of cooked rice vermicelli.
