TOFU SALAD SANDWICH
8 oz (225g) crumbled tofu (can be replaced by chicken)
1/2 cup (125ml) diced celery
1/2 cup 9125ml) diced carrot
2 thinly chopped shallots
1 tbsp (15ml) finely chopped parsley
1 tbsp (15ml) olive oil
1/2 cup (125ml) low-fat mayonnaise
1 pinch basil
1 pinch thyme
1 pinch chervil
Season and pepper to your taste
Mix all the ingredients in a bowl.
Serve in a whole-wheat pita bread or as a spread in a sandwich.
