CHINESE STYLE FISH FILLET
Ingredients
1 lb (450g) sole or haddock fillet
2 tbsp (30ml) low-fat soya sauce
1 tbsp (15ml) lemon juice
1 thinly chopped garlic clove (or garlic powder)
1 tbsp (15ml) ketchup
1/2 tbsp (2ml) ginger
1/2 tbsp (2ml) lemon zest
Preparation
In a microwaveable dish, mix the soya sauce, lemon juice, garlic, ketchup, ginger and lemon zest.
Coat the sole/haddock fillets with this mixture and lay them on the dish.
Cover and cook for 5 minutes, then leave to rest.
Serve with beetroot as an accompaniment.
