VEGETABLE CREAM SOUP
Ingredients
1 onion
1 thinly chopped garlic clove
1 diced potato
1 or 2 diced carrots
1/2 cup (125ml) broccoli heads (no stalks)
1 diced celery stick
1 bay leaf
1 pinch thyme
1 bunch fresh parsley
1 tsp basil
1 pinch pepper
Season to your taste with salt substitutes
1-2 tbsp (15-30ml) chicken broth
1 tbsp (15ml) of cold pressed olive oil
Preparation
Brown the onion and garlic in the oil.
Add all the other ingredients except the chicken broth and parsley. Cover with water and leave to simmer until the vegetables are soft.
Put it all in the mixer and add the chicken broth and parsley.
